Chicken with Pineapple-Mandarin Dressing


6 chicken breast halves (about 6 ounces each), on the bone
salt and coarse ground black pepper
1 can (8 ounces) pineapple chunks in juice
1 can (10 ounces) Mandarin oranges in juice
2 teaspoons cornstarch
1/4 cup chopped green onion
2 tablespoons brown sugar
1 teaspoon grated gingeroot
2 teaspoons soy sauce


Season the chicken with salt and pepper. Broil 4 inches from a high fire for 15 minutes on its bone side, turn and broil 10 minutes more, until a thermometer inserted in the thickest part of the chicken registers 160F.
Meanwhile mix the juices from the fruit in a saucepan; add the pineapple, Mandarin oranges, green onion, brown sugar, ginger, and soy sauce. Cook over medium heat until thickened, about 4 minutes.
Pour the sauce over the chicken and serve.
